Kamchatka Red King Crab

Red king crab from the Kamchatka fishery is the benchmark against which all crab is measured: dense, sweet, faintly briny meat carried in legs that can span over a metre. Our lines are processed and frozen at origin to lock in cellular moisture, then held at −18°C in an unbroken cold chain to the kitchen door.
