How supply works
Weekly availability. Wild catches move week to week, so we confirm grade and availability against the weekly landing list rather than a standing annual sheet.
Cold chain. Frozen lines are held at −18°C end to end and chilled lines at 0–4°C, with temperature-logged, Municipality-permitted delivery by appointment.
Documentation. Origin and catch documentation travel with every consignment, and cuts and grades are specified per order rather than substituted without notice.
