How to Store King Crab — Freezer, Fridge and After Thawing

Keep king crab at −18°C or below, in its original vacuum packaging, until the day you intend to serve it. At that temperature and unopened, frozen crab holds well for months.

Keep it at the back of the freezer, not the door — door temperature swings every time it opens, and swings are what cause ice crystals and freezer burn.

If you see heavy internal frost or dry, shrunken meat pulling away from the shell, the cold chain has been broken somewhere.

Thawed

Once thawed in the refrigerator, use king crab within about 24–48 hours, kept at 0–4°C. It does not improve with waiting.

Do not re-freeze thawed crab. Re-freezing ruptures the cell structure, and the meat comes back watery and stringy. If you thawed it, commit to it.

Keep it covered and on a tray — it will release liquid.

Why the cold chain matters before it even reaches you

Everything above assumes the crab arrived in good condition. A crab that has already been through a temperature excursion in transit is compromised before you touch it, and no amount of careful home storage recovers it.
