King Crab vs Lobster — Which for Your Table?

Both are the centrepiece of an expensive evening, and hosts often treat them as interchangeable. They are not. The choice should follow the dinner you are trying to give.

Flavour and texture

King crab is sweet, delicate and fibrous — the meat comes away in long, generous strands. It is rich enough that guests eat less than expected.

Lobster is firmer, denser and more savoury, with a chew king crab does not have. The tail and the claw eat like two different products.

Neither needs a sauce. Both are ruined by too much heat.

Yield and effort

King crab clusters give generous meat per shell and are relatively easy to open — a cracker and a pick and guests manage happily.

Lobster requires more work per gram and more equipment, and a whole lobster intimidates some guests.

If you want zero labour: king crab merus or claw meat, or lobster tails. Both are shell-free formats and the cost per serving is closer to in-shell than the per-kilogram price suggests.

Which to serve

For drama and a shared, hands-on feast: king crab clusters. The legs are enormous and the table becomes an event.

For plated, controlled fine dining: lobster tail, or king crab merus.

For a mixed table where guests have different appetites: both, in smaller quantities — which is exactly what a surf course is for.

One practical note for the Gulf: crustacean permissibility differs by school of jurisprudence, and this applies to lobster as it does to crab. Where guests' positions are unknown, offering a fin-fish option alongside is the gracious solution.
