Whole crab and yield

Whole crab is the cheapest cut per kilogram as bought, because you are buying shell, carapace and water alongside the meat. Whether it is genuinely cheaper depends on your kitchen.

A brigade with time, and a use for shells and body meat, gets real value from a whole crab. A kitchen plating covers at speed with no stock pot running will lose money on it. Compare cuts on what you actually plate.

How a whole crab breaks down

Landed live, cooked whole and split: the carapace comes away, leaving two clusters, each a shoulder with three walking legs and one claw. Each leg divides into phalanges — the first is the merus — and the shoulder holds fine, loose meat for tartare, filling or soup.

Is whole king crab cheaper than legs?

Cheaper per kilogram as bought, not necessarily per kilogram of meat you plate — you are also buying shell and carapace. It is genuinely cheaper only if your kitchen has a use for body meat and shells.

Is whole king crab raw or cooked?

Our frozen whole king crab is cooked and frozen at origin. It needs thawing and gentle reheating, not cooking from raw.
