Imperial is the top of the house. It takes only 4L to 7L grade red king crab — the largest sections the fishery produces — and packs them as whole merus, the thick first phalanx with the longest unbroken muscle fibre.
The sections are stood upright rather than laid flat, so what you see through the glass is what you serve: intact, full-length pieces that need no assembly on the plate.
This is the grade a fishery yields least of. It is the jar to open when the crab is the occasion rather than an ingredient in one.
