In the box

  • ·1 × 8-bone Frenched lamb rack (approx. 600 g)
  • ·Chimichurri sachet (parsley, oregano, garlic, red wine vinegar, chilli)
  • ·200 g tenderstem broccoli
  • ·1 head confit garlic
  • ·Rosemary sprig

  • ·Olive oil
  • ·Salt and black pepper
  • ·An oven, a heavy oven-proof pan
  • ·A meat thermometer — the one tool this dish genuinely needs

Method

  1. 01

    Temper the rack

    Out of the fridge 30–40 minutes before it goes near heat. A cold rack will be raw at the bone while the outside is grey. This step is not optional on a joint this thick.

  2. 02

    Heat the oven to 200 °C

    Pat the rack completely dry with kitchen paper and season it generously on every surface. Moisture is what stops a crust forming, so be thorough.

  3. 03

    Sear all sides

    Hot pan, film of oil. Fat-cap down first for 3–4 minutes until it is deep brown and has rendered, then each remaining side for about 1 minute. Stand it on the bones if you need to. You are building the crust here — the oven will not do it for you.

  4. 04

    Roast to temperature, not to time

    Rosemary in the pan, then into the oven. Roughly 12–18 minutes, but ignore that number and use the thermometer in the thickest part, away from bone: about 52 °C for rare, 55 °C for medium-rare, 60 °C for medium. Pull it 3 °C below your target — it keeps climbing as it rests.

  5. 05

    Rest it properly — 10 minutes, minimum

    Onto a warm plate or board, loosely covered. This is the step people skip and then wonder why the board is flooded with juice and the meat is dry. Ten minutes is the difference between a good rack and a great one.

  6. 06

    Broccoli, then carve

    While it rests, blanch or sear the tenderstem for 3–4 minutes — it should still have snap. Carve between the bones into cutlets, spoon the chimichurri over, and add the confit garlic cloves whole.

Watch this

The single most common failure is skipping the rest. Ten minutes off the heat, covered. Slice it early and the juice ends up on the board instead of in the meat.
