In the box

  • ·2 × milk-fed veal rack chops (approx. 320 g each, bone in)
  • ·200 g mixed wild mushrooms (porcini, shiitake)
  • ·Sage butter puck
  • ·150 g baby spinach
  • ·Garlic clove and thyme

  • ·A heavy oven-proof pan

Method

  1. 01

    Temper and dry

    Out of the fridge 30 minutes ahead. Pat the chops bone-dry and season hard on both faces and the fat edge.

  2. 02

    Heat the oven to 190 °C

    Milk-fed veal is lean and pale and far less forgiving than beef. It wants a moderate oven and a thermometer, not guesswork.

  3. 03

    Sear, including the fat edge

    Hot pan, film of oil, 2–3 minutes a side until properly golden. Then hold each chop on its fat edge with tongs for a minute to render it. That edge is where the flavour is.

  4. 04

    Butter-baste and finish in the oven

    Add the sage butter, the crushed garlic and thyme. Tilt the pan and spoon the foaming butter over the chops for a minute. Then into the oven for 6–10 minutes, to about 58 °C at the centre for a blushing pink — veal served fully well-done is a waste of the ingredient.

  5. 05

    Rest 8 minutes, and use the time

    Chops onto a warm plate. In the same pan, sear the mushrooms hard for 4–5 minutes — do not crowd them or they will stew. Then the spinach for 30 seconds, just until it collapses.

  6. 06

    Plate

    Chop on warm plates, mushrooms and spinach alongside, the brown butter from the pan spooned over, and a crisp sage leaf if you have kept one back.

Watch this

Brown butter goes from nutty to burnt in about 20 seconds. The moment it smells like hazelnuts and the solids turn the colour of a walnut, get it off the heat. If it smells sharp or acrid, throw it away and start again — burnt butter cannot be rescued.
