Buyer's Guide
Kamchatka vs Alaskan King Crab — What's the Difference?
Buyers ask this constantly, usually expecting two different animals. They are not. Understanding what the two names actually mean will save you from paying for a label rather than for quality.
Looking for the product itself? See Kamchatka Red King Crab — the deep, cold pacific in its most celebrated form — clusters, merus and claw, frozen at peak.
They are the same species
Both Kamchatka and Alaskan red king crab are Paralithodes camtschaticus — the same animal. The names refer to the fishery, not the species. Kamchatka denotes the North Pacific waters off the Russian Far East; Alaskan denotes the Bering Sea fishery.
The species is in fact native to the Kamchatka region; the Barents Sea population well known to European buyers was introduced there in the twentieth century and has since spread. So 'Kamchatka' is closer to the crab's original home than a marketing flourish.
What actually changes the quality
Grade and size. Leg diameter and meat fill drive eating quality far more than the fishery name. A high-grade 5L cluster will outperform a mediocre 4L from any origin.
Cut. Merus (first phalanx) is the prime, thickest meat; second phalanx and claw follow. Choosing the right cut for the dish matters more than choosing the right ocean.
Freezing and handling. Crab blast-frozen at origin at around −40°C holds its cellular moisture. Product that has broken the cold chain and been re-frozen will be watery and stringy regardless of where it was caught.
Season. Both fisheries are quota-managed and seasonal, and both firm in price ahead of peak demand.
So which should you buy?
Buy on grade, cut and cold chain — not on the fishery name. Ask your supplier for the grade, the cut, whether it was frozen at origin, and the landing date. A supplier who can answer those four questions is worth more than one with a better story.
Kamchatka is the benchmark reference point in the Gulf trade, and prices accordingly. That premium is worth paying only when the grade and handling justify it.
Frequently asked
- Is Kamchatka king crab better than Alaskan?
- Not inherently — they are the same species. Quality is determined by grade, cut, and whether the cold chain was maintained from catch to kitchen. A well-handled crab from either fishery beats a poorly handled one from the other.
- Is red king crab the same as snow crab?
- No. Red king crab (Paralithodes camtschaticus) is much larger with thick, meaty legs. Snow crab (Chionoecetes) is a smaller, different genus with slimmer legs and a sweeter, more delicate meat. They are not substitutes at the premium end.
- Where does Pearl Sovereign source king crab?
- Our red king crab is Kamchatka fishery, processed and frozen at origin, and held at −18°C in an unbroken cold chain to the kitchen door. Grades and cuts are confirmed against the weekly landing list.
